Quick Party Dessert
1 Prepared Graham Cracker Crust
1 Box Dessert Mix, Any Flavour 1 8 oz. block Cream Cheese 1 16 oz. tub frozen whipped topping 1 qt. fresh fruit, washed and sliced 1/2 cup fruit jelly Using electric mixer, beat cream cheese until no lumps remain. Slowly add contents of dessert mix. Increase speed to medium and beat for 2 minutes. Turn speed to low and blend in the thawed topping. Beat only until no white streaks remain. Pour mixture into the prepared crust. Arrange fruit over the top. Melt the jelly in a glass dish in the microwave or a small saucepan on the stove just until it is hot. Stir with a spoon until smooth. Using a pastry brush, cover the fruit with a coating of the hot jelly. Work quickly so it does not harden before you get the fruit all covered. Place the dessert in the fridge for at least 2 hours to firm up before serving. |

Here, I used the lemon cream mix and fresh strawberries. I used apricot jelly for the glaze. My jelly kept hardening and looked a bit lumpy. So I tossed a handful of toasted almond slices on top and it looked great. This took about 10 minutes in total to assemble and was demolished in about 2 minutes at the party I took it to.
